Peach Crumble Cake

Marissa here from Yes to Dessert! I am excited to share this recipe for a peach crumble cake. This cake was super moist, and, if you want, you can add a spiced cream cheese frosting for a little extra razzle-dazzle.

Ingredients:

2 ½ peaches

1/3 and 2 TBS of brown sugar

4 TSP of cinnamon

2 TSP of nutmeg

½ cup of butter

2 TSP of vanilla extract

1 ¾ TSP of baking powder

½ and 3TSP of milk

2 eggs

For Icing (optional):

4oz of cream cheese

¾ cup of powdered sugar

1 TSP of vanilla extract

A dash of cinnamon*

A dash of nutmeg*

 Note*: You may add small amounts (less than a tsp of cinnamon and nutmeg) to taste.

 Instructions:

1.     Preheat oven to 350 degrees.

2.     Cream together the (room temperature) butter and sugar. Once the mixture is soft and fully incorporated add in the brown sugar.

3.     Add eggs, vanilla, and milk. Mix thoroughly.

4.     Pour in ½ of the flour, folding into the wet ingredients, before adding in the second ½ of the flour, as well as the baking powder cinnamon and nutmeg.

5.     Pour ½ of the cake mixture into a greased or lined (with parchment paper) 9 x5 loaf pan.

6.     Add in ½ of peach mixture, followed by the remaining cake batter and peaches. Using the back of a spoon, or a spatula, gentle swirl in the peach and cake batter on top.

7.     Bake for 35 – 60 minutes (or until toothpick comes out clean).

8.     Let the cake cool completely before slicing or adding icing.

9.     If you choose to make icing, mix 4oz of cream cheese with powdered sugar and vanilla.

10.  Add in dash cinnamon and nutmeg (optional).

11.  If you find that the mixture is too thick to drizzle, you may add a tsp of milk until the icing reaches your desired consistency.
