Non-Traditional Peach Cobbler

Peach cobbler

Hey All,

I honestly don’t know what led me to make peach cobbler. I could probably count on one hand the times I have had this dessert; as it is not something I typically gravitate towards. However, I had a taste for something “peachy” and this was the outcome. I was told is a non-traditional version of peach cobbler, as it has a more cake-like texture as opposed to the traditional biscuit-like topping. 

With this note, I hope you all enjoy this recipe. I topped mine with ice cream and thought it tasted best warm or at room temperature. Let me know what you all think in the comments. I look forward to hearing from you all. 

Ingredients:

  • 1 cup of all purpose flour 

  • 2 cups of sugar

  • 1 table spoon baking powder

  • 1/2 teaspoon of salt

  • 1 cup of milk

  • 1/2 cup of unsalted butter

  • 1 table spoon lemon juice

  • 1 table spoon nutmeg

  • 2 table spoons cinnamon 

  • 1 table spoon of lemon juice

  • 8 peaches 

Instructions:

  1. To make the batter: Combine 1 cup of flour, 1 cup of sugar, baking powder, salt, butter (room temperature) and milk. Mix well, and set aside.

  2. Slice the peaches. 

  3. Add the peaches to a medium sized pot with the remaining cup of sugar, cinnamon, nutmeg and lemon juice. Continue to stir the mixture until it comes to a boil. 

  4. Add the peach mixture to a 13 x 9 inch baking pan. 

  5. Pour the batter over the peaches, spreading it evenly. 

  6. Bake the cobbler at 375 degrees for approximately 40 minutes or until golden brown.
