Oreo Cookie Pie

Hi All!

This gluten free, no bake dessert is far from bland and is especially yummy, if I do say so myself. It is great for all ages (my grandparents LOVE this pie) and tends to be a crowd pleaser for any occasion. Also, I personally feel like many desserts are automatically elevated when Oreos are involved, but thats just me…

Pro tips: I would not recommend freezing, but the longer you keep it in the refrigerator (say over night), the more solidified the pie becomes making it easier to slice and serve. The Oreo cream makes the mixture a little sweeter. Add more or less based on your taste preferences. I find that more is better when it comes to Oreos, whether you use it in the mixture or for decorations, but use your own judgement and have fun with it… I know I did!


Ingredients:

  • Oreo cookie crust (ready made)

  • 1 cup heavy whipping cream

  • 1 1/2 cups of powdered sugar

  • 8 oz of cream cheese

  • 2 cups Oreo cookies

  • 1/2cup cream Oreo filling


Instructions:

  1. Separate Oreos from filling. The filling can be easily scrapped off with a knife. (please resist from the twist and lick method LOL)

  2. Crush the Oreos until they are fine ( some small crumbs are fine) and set aside.

  3. To make the whip cream (by hand): Pour 1 cup of the heavy whipping cream into a cold medium - sized metal bowl. I recommend setting the metal bowl and metal whisk in the freezer for about 2 1/2 hours before starting this process. Ensure the bowl and whisk are completely dry before placing into the fridge, to prevent ice chunks from forming. Beat the heavy cream in the cooled bowl until stiff peaks form (about 5 or so minutes). Yes, this step requires some elbow grease.

  4. Add the powdered sugar to the whip cream.

  5. In a separate bowl beat the room temperature cream cheese until it is fluffy.

  6. Add the cream cheese and vanilla to the whipped cream mixture.

  7. Fold in the crushed Oreos and Oreo filling (to taste).

  8. Transfer the mixture into the pie crust and spread evenly. Lightly cover the pie and refrigerate for at least 4 hours before serving. Remember the longer you let it refrigerate, the firmer the pie becomes, so overnight is best.

  9. Decorate the pie with left over whipped cream or Oreos as desired.
