Apple Cinnamon Muffins

Hi All,

I love meal prepping my lunch. I think it is a great way to say money and time in the mornings. Although most days I would pack lunch, I made a habit out of going to the bakery in the morning to buy muffins, croissants and other breakfast treats. I decided to make muffins because they are easy to grab and go and it’s one of the treats I regularly enjoy eating in the mornings.

Pro tips: Use what ever apples you enjoy eating most, or multiple types if you’d like. This was a very wet mixture, but I was able to tell when the muffins were done, by the nice golden brown color as well as the crisps of the apples on top.


Ingredients:

  • 1 1/3 cups of all purpose flour

  • 3/4 cups of sugar

  • 2 table spoons of cinnamon (or to taste)

  • 3 apples (I used one Granny Smith, 1 Golden Delicious, 1 Fuji)

  • 1 teaspoon of baking powder

  • 1 teaspoon of baking soda

  • 1 cup of milk

  • 1 stick of butter

  • 1 large egg


Instructions:

  1. Pre-heat the oven to 350 degrees F. Place muffin/cupcake lines in the muffin pan.

  2. Skin and finely chop the apples and set them aside.

  3. In a large bowl mix together the flour, sugar, baking soda, baking powder, and cinnamon. I find it helpful to sift the flour.

  4. In a separate bowl mix together the (room temperature) melted butter, milk and the egg. If you decide to melt the butter on the stove or in the microwave, be sure the butter is cooled before mixing in the egg. We don’t want scrambled eggs :)

  5. Pour the wet mixture into the large bowl with the dry ingredients and stir until the batter is smooth.

  6. Once there are no lumps, gently fold in the the apples, ensure the apples have been spread evenly throughout.

  7. Bake at 350 F for 22 minutes.
